Ingredients
2 cups Al-Shalan rice
Chicken pieces
2 tomatoes (diced)
1 onion (chopped)
Tomato paste
Fresh ginger (grated)
Garlic (minced)
1 cinnamon stick
Mixed spices
Black pepper
Oil
Salt (to taste)
Recipe instruction

1. Soak the rice in warm water for about 20 minutes, then drain.

2. In a large pot, heat oil and sauté the chopped onion until soft and fragrant.

3. Add diced tomatoes, garlic, ginger, cinnamon stick, black pepper, and mixed spices. Stir well.

4. Add the chicken pieces and cook until lightly browned and coated with the spices.

5. Pour in water and cook the chicken until tender and fully done.

6. Add the soaked rice to the chicken broth and mix gently.

7. Cover and cook on low heat until the rice is fluffy and fully cooked.

8. Serve hot and enjoy your delicious homemade kabsa.
